BUBBLE TEA RECIPES

Bubble Tea is a tea-based drink with the addition of tapioca pearls.  Originating in Taiwan it is becoming popular all around the World.  Bubble tea vendors offer an impressive combination of tasting possibilities.  Basically, it consists of a combination of iced tea and a light snack.  To explore this style, we have concocted three recipes to help you try ‘the art of Bubble Tea’.

Tapioca pearls

Tapioca pearls are available in most Asian groceries. Simply follow the instructions on the packaging. Don’t forget to buy the special-sized bubble tea straws to accompany your drink.


Matcha Bubble Tea

Ingredients (For 1 serving of 450ml)

  • 1/4 cup of tapioca pearls.
  • 2,5g of Matcha Sora
  • 400ml almond milk
  • Ice cubes

Preparation

  1. Whip a teaspoon (2 to 2,5 g) of Matcha Sora with a little sugar (to taste) in around 50 ml hot water (not boiling!). Pour 400 ml almond milk onto this matcha base.
  2. Put your tapioca pearls into a large glass. 


Tea Studio Bubble Tea

Ingredients (For 1 serving of 550ml)

  • 1/4 cup of tapioca pearls.
  • 400 ml black tea from the Tea Studio Nilgiri Coonoor
  • 100 ml milk of your choice
  • 1 to 2 teaspoons maple syrup
  • Ice cubes

Preparation

  1. Prepare a hot infusion de 1L of Tea Studio Nilgiri Coonoor in advance, using the brewing instructions on the tea packet, and let it cool. A stronger tea will give a better result. Once cool refrigerate in a mason jar.
  2. Put your tapioca pearls into a large glass. Add ice cubes, 400ml black tea, 100 ml your chosen milk and the maple syrup. Mix well and pour onto the tapioca pearls to drink. 


Grapefruit Bubble Tea

Ingredients (For 1 serving of 550ml)

  • 1/4 cup of tapioca pearls.
  • 400ml Royal Jasmine organic green tea
  • 1 ripe grapefruit
  • 50 ml grapefruit syrup (see below*)
  • Ice cubes

Preparation

  1. Prepare an infusion of 1L of organic Royal Jasmin using the brewing instructions on the tea packet, and leave it to cool. Once cool refrigerate in a mason jar.
  2. Squeeze a fresh grapefruit
  3. Put your tapioca pearls into a large glass. Add ice cubes, 400ml of green tea, 100 ml of freshly squeezed grapefruit juice and add one or 2 teaspoons of grapefruit syrup. Mix well and pour onto the tapioca pearls to drink.  

*Grapefruit Syrup

Ingredients

  • 1 ripe grapefruit
  • 125g of sugar
  • 125 ml water

Preparation

  1. For best results use a really ripe grapefruit! Rinse and scrub the fruit in water. Peel or grate the zest (avoiding the white pith, which is bitter). In a small pan heat 125 ml water and 125g of sugar at medium heat, stir continuously until the sugar is completely dissolved. Cut the grapefruit in 2 and squeeze out all the juice. Remove the pan from the heat and add the juice and zest. Allow to sit for 10 minutes. Filter and serve

*This concentrate can be kept in an airtight container for 3 to 4 weeks or can be frozen. Quantities can easily be increased.
